1) In the COA of Reb A from different suppliers, the sweetness multiples vary from 300~450. Why?
Traditionally, the sweetness is measured by comparing 200ppm RA water-solution and 4~8% sugar solution. If researchers believed the sweetness of Reb A solution is equal to 6% sugar solution, the sweetness multiple is calculated as 6%/200ppm=300. Due to subjectivity, other people will get the times from 300 to 450.
2) Actually, the sweetness multiples of RA decrease with increase of concentration.
Non-linear relationship of concentration and sweetness for RA
Compared to sucrose, the relationship of concentration and sweetness for RA is non-linear. This is same to Aspartame, but the maximum sweetness equivalence of RA is lower.
For example, for 200ppm RA solution, the sweetness multiple is 300. But for 500ppm stevia solution, it may be 200 or even below 200. So, it’s meaningless to talk about the sweetness multiples if not setting concentration first. (It’s very important for application)
